Chili Lime Watermelon Salad

Ingredients
- 1 seedless watermelon cut into 1/2-1 inch cubes
- 1 large cucumber diced
- 1 jalapeño diced (remove seeds and white membrane prior to dicing for a mild heat)
- Juice of 1 lime
- 1/2 cup pumpkin seeds
- 1 large bunch of mint thinly sliced AKA chiffonade
- 1 bunch of cilantro chopped to your texture preference
- 1 large shallot thinly sliced into rings
- Chili Lime seasoning OR Tajin to taste (sub chili powder and lime zest if you can’t find either)
- 6 oz. block of feta
- Kosher salt if needed for seasoning
Directions
- Combine all ingredients in a bowl. Season with salt and chili lime seasoning to taste. Don’t add the salt until after you add the feta! Feta is already salty as it is.
