Chili Lime Watermelon Salad

Serves 4 -6 as a side

Ingredients 

  • 1 seedless watermelon cut into 1/2-1 inch cubes
  • 1 large cucumber diced
  • 1 jalapeño diced (remove seeds and white membrane prior to dicing for a mild heat)
  • Juice of 1 lime
  • 1/2 cup pumpkin seeds
  • 1 large bunch of mint thinly sliced AKA chiffonade
  • 1 bunch of cilantro chopped to your texture preference
  • 1 large shallot thinly sliced into rings
  • Chili Lime seasoning OR Tajin to taste (sub chili powder and lime zest if you can’t find either)
  • 6 oz. block of feta
  • Kosher salt if needed for seasoning

Directions 

  • Combine all ingredients in a bowl. Season with salt and chili lime seasoning to taste. Don’t add the salt until after you add the feta! Feta is already salty as it is.
