Shrimp + Guacamole Sweet Potato Sliders

Roasted sweet potato "toast" topped with salty, creamy, zesty guacamole and crispy seared shrimp. This dish is gluten-free and super easy!

First on the menu is an outstanding pumpkin risotto with stracciatella, crispy sage, and shiitakes. Paired with it is a maple dijon pork tenderloin (or chicken thighs). For dessert, enjoy an apple cider bread pudding with creme anglaise and caramel.

    Love this recipe! Simple and tasty. Avocado and shrimp are my absolute favorite so naturally I gravitated towards this recipe. I was out of sweet potatoes at the time, so I ended up using regular potatoes and it still turned out great! Definitely will be making again! Thanks Skyler for the inspo!

    Obsessed. I will be making this dish again and again and again! The combination was something I never would have thought of but the roasted sweet potato, avocado and shrimp a paired together perfectly. Absolutely mouth watering. I love how simple it is to make, yet how impressive and delicious it is. I’ve already sent Skyler’s recipe to multiple people.
