Shrimp + Guacamole Sweet Potato Sliders

Roasted sweet potato "toast" topped with salty, creamy, zesty guacamole and crispy seared shrimp. This dish is gluten-free and super easy!

First on the menu is an outstanding pumpkin risotto with stracciatella, crispy sage, and shiitakes. Paired with it is a maple dijon pork tenderloin (or chicken thighs). For dessert, enjoy an apple cider bread pudding with creme anglaise and caramel.

    These sweet potato sliders were a game changer! I usually have guacamole on hand, so I love using a sweet potato slice as the base to this delicious dish. I tried it with fried shrimp and topped with spicy honey. So good!!

    I absolutely loved this dish! Avocado is an essential component in at least one of my meals everyday, so I was eager to incorporate the avocado in a new way, that was not in your typical salad or toast. All of the flavors paired really well together, and I honestly think this one of the best dishes I have ever eaten. I’m a huge fan of Skyler and her recipes, and knowing that this is so quick and easy to make, I will definitely be sharing the recipe with my friends and family.
