Shrimp + Guacamole Sweet Potato Sliders

Roasted sweet potato "toast" topped with salty, creamy, zesty guacamole and crispy seared shrimp. This dish is gluten-free and super easy!

First on the menu is an outstanding pumpkin risotto with stracciatella, crispy sage, and shiitakes. Paired with it is a maple dijon pork tenderloin (or chicken thighs). For dessert, enjoy an apple cider bread pudding with creme anglaise and caramel.

    This was so good! The creamy avocado with the shrimp and sweet potato is delicious! I would have never thought of this recipe on my own, but I’m happy she created it! Definitely will make it again.

    This recipe is going to be a go to for a quick lunch or weeknight dinner. A great recipe for a healthy meal that’s still very satisfying! For my variation, I finished the shrimp with a splash of dry white wine for an extra pop of acidity which goes so great with the creamy avocado.
