Cucumber Salad with Sesame, Soy and Ginger Dressing

Refreshing sliced cucumbers tossed in sesame oil, soy sauce and rice vinegar. Add some fresh ginger and red onion for an extra pop of flavor and you have the most simple and delicious cucumber salad of all time! Top with a protein of your choice, whether its tofu, salmon, cod, shrimp, tempeh, meat, or even just a handful of peanuts.

Dinner Party Menu

First on the menu is an outstanding pumpkin risotto with stracciatella, crispy sage, and shiitakes. Paired with it is a maple dijon pork tenderloin (or chicken thighs). For dessert, enjoy an apple cider bread pudding with creme anglaise and caramel.

    Hi! I see this is tagged gluten free, but soy sauce actually contains gluten. Tamari is a GF substitute for soy sauce that makes a great swap!
