October Weekly Meal Prep Menu

Here’s a meal prep menu for you to enjoy this October! I used seasonal ingredients so we can enjoy allll the flavors of fall, plus I included 2 fun spins on a stuffed chicken breast that you’ll love!

In addition to making these recipes, I also meal prep for Arlo with the same ingredients so I hit 2 birds with one stone! I roast an extra delicata squash and an extra butternut squash for his weekly soft foods, then I make one plain chicken breast and finely chop it for him. Finally, I cooked some apples in cinnamon and added to oatmeal for this fall-inspired breakfast!

Fresh Produce:

  • 1 pear: $0.70
  • 1 large butternut squash (around 2-3 lbs): $2.99
  • 1 large delicata squash: $2.49
  • 1 medium head cauliflower: $2.79
  • 1 large apple (Granny Smith or Honeycrisp): $0.99

Dinner Party Menu

First on the menu is an outstanding pumpkin risotto with stracciatella, crispy sage, and shiitakes. Paired with it is a maple dijon pork tenderloin (or chicken thighs). For dessert, enjoy an apple cider bread pudding with creme anglaise and caramel.
