Meatless “Sweet Italian Sausage” Eggplant Ragu

Get all the flavor of a rich sweet Italian sausage tomato sauce without the meat! This ragu is made with a base of caramelized onions and garlic, then simmered with tomato paste, eggplant, and a fennel seed spice mixture. This is perfect for vegetarians and can be adapted for vegans.

Dinner Party Menu

First on the menu is an outstanding pumpkin risotto with stracciatella, crispy sage, and shiitakes. Paired with it is a maple dijon pork tenderloin (or chicken thighs). For dessert, enjoy an apple cider bread pudding with creme anglaise and caramel.

    AMAZING! I have been trying to eat more vegetarian meals and this was so satisfying. My boyfriend is a total meat lover and I made this for our at-home date might tonight. He loved it and didn’t mind that it was a meatless dish. Total win-win in my book!!!

    I’ve been a HUGE fan of Skyler’s work for years and just recently started cooking. I thought this was going to be difficult to make but it was super easy and the YouTube video broke all the steps down, which made its easier for me to cook! I can’t wait to make the berry brie next weekend!!

    This ragu was literally perfection – I wouldn’t change a thing, And SUPER easy to make!! I was able to get a consistency just like Skyler’s because of her super detailed recipe and awesome YouTube video. Would totally recommend this to anyone, especially those trying to eat a more plant based diet 🙂
