This is an ICONIC summer dessert. It’s family style, only 3 ingredients and extremely epic. Oh also you can make it on the grill instead of baking in the oven which is bonus points for summer hosting!!!
Grilled Blueberry Cookie Skillet

Ingredients
- 1 log or pack of sugar cookie dough I used Pilsbury
- 1/2 cup blueberries fresh or frozen – I actually recommend fresh so they don’t bleed water into the dough
- Ice cream for topping I used strawberry cheesecake from Ben & Jerry’s
Directions
- Preheat the grill to 350 degrees F. I did this by turning the left and right burners on medium and leaving the center burner off. Make sure the grill is at a steady 350. Every grill is different so play around with the burners and shut it for 5-10 minutes to get a gauge for how it heats.
- In the meantime, add the cookie dough to the cast iron skillet. Press into a flat layer with your hands. Add blueberries in the center of the dough to taste. Feel free to add more than 1/2 cup if you want. Press the blueberries into the dough.
- Place the skillet in the grill. Close the lid. Grill for 20-25 minutes, until golden brown around the edges. During this time, make sure the temp doesn’t go above 375! If it keeps climbing, open the lid to release some heat and bring it back to 350. If using the oven, just bake at 350 for 20-25 min!
- Top with ice cream. I went with strawberry cheesecake but another good one is lemon blueberry from Jeni’s!
