Crispy Oven-Fried Chicken Cutlet (Ground Chicken)

A giant, ultra-thin ground chicken cutlet coated in crispy panko and baked on a sheet pan until deeply golden and crunchy—no frying required. It delivers all the shatteringly crisp, golden-brown satisfaction of fried chicken, but on a single sheet pan, without the oily mess, making it perfect for an easy, high-impact weeknight dinner.

Dinner Party Menu

First on the menu is an outstanding pumpkin risotto with stracciatella, crispy sage, and shiitakes. Paired with it is a maple dijon pork tenderloin (or chicken thighs). For dessert, enjoy an apple cider bread pudding with creme anglaise and caramel.

So good! I only needed 1 egg for both sides and maybe half a box of panko. Delish!

This chicken came out so delicious. I just did a plain chicken cutlet for dinner, and the whole family loved it. I’m excited for all the meals that I can use this technique with and take away the hassle of having to fry chicken on the stove. Loved it!

What if you don’t have a convection oven?

It should still work! I just like the convection function because the hot air swirling around ensures more even crisping. It may be a little less even but worth trying!
