Carbone Spicy Rigatoni Vodka

This is my homemade version of Carbone's staple dish, spicy rigatoni vodka. It can be made at home for under $10 and it's perfect for dinner guests with its distinguished mix of flavors. I also include a vegan version as well!

Dinner Party Menu

First on the menu is an outstanding pumpkin risotto with stracciatella, crispy sage, and shiitakes. Paired with it is a maple dijon pork tenderloin (or chicken thighs). For dessert, enjoy an apple cider bread pudding with creme anglaise and caramel.

    The use of vodka in an Italian tomato sauce has to be understood in terms of culinary alchemy…. It is imperative that the vodka be completely cooked out and there should be no trace of alcohol in the sauce//you’re not making a cocktail here… You are creating something more magical _ you are extracting glutamates ( umami ) from the tomatoes and the other ingredients in the sauce. Someone mentioned they were pregnant and asked about cooking out the vodka………. There’s your answer!
