If you ask me, baked brie is a year round crowd pleaser. It pairs with almost any fruit and any seasonal ingredient and it’s just the most buttery deliciousness that anyone could ask for, except if you’re vegan or lactose intolerant of course. So that being said, if you are obsessed with brie like I am, you MUST try my summery baked brie with balsamic peaches and thyme! I made this on the grill but you can also make it by throwing a skillet in the oven. You also don’t need to grill the peaches and can instead throw them in a skillet to sauté.
Baked Brie with Balsamic Peaches and Thyme
Ingredients
- 4 ripe peaches pitted and sliced into 1-2 inch thick slices
- Avocado oil
- Salt to taste
- 1 baguette halved horizontally
- 1 wheel of Brie cheese 8 oz, scored
- 4 sprigs of fresh thyme
- 2-3 tablespoons balsamic vinegar
- Honey for drizzling, to taste
- Fresh thyme leaves for garnish, optional
Directions
- Preheat the grill to medium-high heat (about 450°F or 200°C).
- Rub the peaches with avocado oil and sprinkle with a pinch of salt.
- Half the baguette horizontally. Drizzle the cut sides of the baguette halves with oil.
- Score the top of the Brie cheese wheel in a crisscross pattern. Place the Brie in a cast iron skillet. Scatter the thyme on the side or over the Brie. Drizzle with balsamic vinegar.
- Take everything out to the grill. Place the peaches on the grill one one side. Place the baguette halves on another side. Where there is room, place the cast iron skillet with the brie. Close the grill. Remove the baguette about 3-4 minutes in (or whenever it’s toasted.) Flip the peaches after about 3-4 minutes and cook until they have grill marks and are tender.
- The brie should be down around 8-10 minutes with the peaches. Just cook it until it’s melty.
- Add the peaches to the skillet with the brie. Drizzle with more balsamic and some honey. Garnish with thyme leaves. Serve with the baguette! I serve it right out of the skillet and plate the baguette but you can plate it all if you want.
- **SOME TIPS:**
- Ensure the peaches are ripe but firm to prevent them from becoming too mushy on the grill.
- You can also add a touch of honey or a sprinkle of crushed nuts like pecans or walnuts on the Brie for added flavor and texture.
- Adjust the balsamic vinegar amount to your preference, adding more for a tangier taste at the end of the grilling
