Crispy Oven-Fried Chicken Cutlet (Ground Chicken)

A giant, ultra-thin ground chicken cutlet coated in crispy panko and baked on a sheet pan until deeply golden and crunchy—no frying required. It delivers all the shatteringly crisp, golden-brown satisfaction of fried chicken, but on a single sheet pan, without the oily mess, making it perfect for an easy, high-impact weeknight dinner.

Dinner Party Menu

First on the menu is an outstanding pumpkin risotto with stracciatella, crispy sage, and shiitakes. Paired with it is a maple dijon pork tenderloin (or chicken thighs). For dessert, enjoy an apple cider bread pudding with creme anglaise and caramel.

Saw you make this on instagram and was v intrigued. i have been making another schnitzel recipe that my 4yo loves, but it was a lot of prep work. this was WAY easier. my husband loved it, too. said the flavor/taste was well above and beyond the effort it took to make. we had ours with mashed potatoes and chili crisp gravy, but we can’t wait to try it a different way each week. huge win in the meal dept. thanks, skyler!!

Easy to make, yummy and no frying and no messy stove to clean up afterwards

I’ve made this twice and it’s such a hit! I’m still perfecting it because it doesn’t LOOK as good as yours, but I think it’s that I don’t have an olive oil spray. I just drizzled some generously on top before baking and had to cook it maybe 6min longer. This is a hard recipe to mess up though and I appreciate that. It’s quick, simple and delicious. Thanks so much for sharing your talent with us!

I am so happy ou love it!!! I would try avocado oil spray and buy some if you can, it really helps even crispiness and that perfect crust since it has a higher smoke point!!
