Smashed Pea Toast with Feta, Shallots and Parsley

Serves 4 pieces of toast

Ingredients 

  • 4 pieces toasted multigrain bread or bread of your choice
  • Perfect pea purée Recipe above*
  • Crumbled feta cheese to taste (would reserve around 1/4 cup)
  • Sliced shallots to taste
  • Fresh parsley to taste
  • Fresh cracked black pepper
  • Olive oil for topping with a drizzle

Directions 

  • Spread the pea purée onto the toasted bread.
  • Top with feta, shallots, pepper, parsley and a drizzle of olive oil. That's it. That's the toast.
