Prosciutto Wrapped Asparagus Bouquets

Crispy prosciutto and roasted asparagus all in one bite and made in under 15 minutes?! SIGN ME UP! You can make these prosciutto wrapped asparagus bundles in an air-fryer, convection oven or toaster oven.

Equipment

  • Air fryer (optional, this can be made in a toaster oven, convection oven or regular oven) See notes!

Ingredients
  

  • 1 lb. asparagus
  • 6 oz. prosciutto
  • Olive oil
  • Pepper to taste
  • Half a lemon for juice and zest
  • Salt to taste

Instructions
 

  • Trim the white ends off of the asparagus.
  • Cut each piece of asparagus in two halves of equal lengths, separating the head from the stem. Set aside.
  • Cut the prosciutto slices in half, lengthwise, yielding 2 long, thin strips from each slice.  If your prosciutto is delicate and pulls apart easily, skip this step and just use the whole slice for the method. Every brand of prosciutto is different!)
  • Lay the prosciutto slice flat on a clean surface. Place 6-8 pieces of asparagus (4 pieces from the top and 4 pieces from the bottom) onto the prosciutto. Wrap the prosciutto tightly around the asparagus, sealing it by pressing the prosciutto tight so it sticks to itself. Repeat with all of the prosciutto and asparagus. 
  • Drizzle each bouquet evenly with olive oil. Squeeze a small splash of lemon juice on top and season with a generous pinch of pepper. The prosciutto should be salty enough, but keep salt on hand to season with at the end of cooking if you would prefer more saltiness.
  • Place into the air fryer basket and air fry on 400 degrees for 6 minutes, until the prosciutto is crisp and the asparagus is bright green. Notes for convection oven, toaster oven or regular oven cook times and temps are in the notes below!
  • Plate with lemon slices and grate lemon zest on top to your taste. Enjoy immediately!

Notes

If using a convection oven or toaster oven, set it to 400 degrees and check on the bouquets at 6 minutes. Cook 1-2 minutes more if necessary. If using a traditional oven, cook for 8-10 minutes, until the prosciutto is crisp to your liking and the asparagus is bright green.
