Cheesy Scalloped Cinnamon Sweet Potatoes

A sweet and spicy spin on a comforting classic! Thinly sliced sweet potatoes layered with a subtle cinnamon bechamel and gruyere and Parmesan to tie it all together. This dish is full of flavor and brings the comfort and warmth to your fall day!

Ingredients
  

Bechamel

  • 5 tbsp all-purpose flour
  • 5 tbsp butter unsalted
  • 3 1/2 cups whole milk
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 2 tsp salt or to taste

Potato Dish

  • 2-3 sweet potatoes thinly sliced (you can use a mandolin)
  • 1 1/2 cup Parmesan shredded
  • 1 1/2 cup gruyere shredded
  • Bechamel as prepared
  • Cinnamon for topping

Instructions
 

  • Preheat the oven to 400 degrees.

Bechamel

  • In a sauce pan, melt the butter on medium heat.
  • Pour the flour into the pan, and with a wooden spoon, quickly stir until a roux is formed. The roux should be thick and sandy looking. Make sure there are no lumps in the roux.
  • Turn the heat off! Whisk in a little of the milk (about 1/4 cup) until it's fully incorporated into the roux. Add a little more, and continue to whisk until a paste-like substance is formed.
  • Turn the heat back on medium high and add the rest of the milk. Whisk for 2-3 minutes, until it begins to thicken and turn into a creamy sauce.
  • When the sauce thickens, switch back to a wooden spoon to stir. Add the salt, cinnamon and nutmeg. Taste to make sure you like the seasonings -- you can always add more!

Scalloped Potato Dish

  • Spread a thin layer of bechamel onto the bottom of a glass baking dish.
  • Add thinly sliced sweet potatoes on top, fully covering the bechamel layer
  • Spread bechamel on top of the sweet potatoes and sprinkle Parmesan and gruyere on top.
  • Top with sweet potatoes, then spread bechamel and generously sprinkle more cheese on top. Repeat until the dish is full. Finish on a layer of cheese, and sprinkle cinnamon on top for the final touch.
  • Bake for 45 minutes. Let it rest for 10 minutes before serving!
