Shrimp + Guacamole Sweet Potato Sliders

This dish is a favorite in our house because it’s easy, flavorful and pretty healthy. It also incorporates ingredients that we usually have laying around: sweet potatoes, frozen shrimp and avocados (plus lime, onion and salt, which we do usually have handy.)

The entire dish takes about 30 minutes to make, and that includes roast time for the sweet potatoes. You can also use an air-fryer or toaster oven to cook the sweet potatoes.
