Everything Brussels Sprouts (3 Ways!)

Brussels sprouts hit their peak trendiness over the past few years, and while I absolutely adore them after they take a bath in bacon fat, I’m looking for a healthier, tasty alternative so I can enjoy them with a little less guilt. In my opinion, if I want to feel guilty after eating something, it’s going to be a burger…a pizza…or a pint of ice cream. Not a vegetable!!! So, for this recipe, I decided to make my Brussels sprouts flavorful and guilt-free.

To make all of this happen, I coated my Brussels sprouts in honey Dijon mustard and olive oil, then I coated them generously in what they now call, everything bagel seasoning (essentially a blend of minced dried garlic, poppy seeds, sesame seeds, salt, and pepper….I added chives for some extra flare.) As if these aren’t amazing on their own, you can also serve these with a cream cheese, or you can top them with an egg, or you can serve them as a fun side dish with any protein. In this recipe, I include a light Greek yogurt sour cream and onion sauce, which I personally love. The possibilities are endless and delicious!

1/2tsp garlic powder
1/2tsp onion powder
