Cheesy Buffalo Chicken Dip

I’m keeping this blog post brief because I just went on a massive “why I love buffalo chicken dip” rant in my latest recipe for my buffalo chicken dip bites. This buffalo chicken dip is the *same* thing as the filling served in those bites! The one thing that’s different here is that the dip is actually easier to make because all you’re doing is mixing up the dip ingredients, then baking it with cheese and extra sauce.  No hassle, tons of flavor.

Serve this dip with crackers (I love to enjoy with Cheez-Its for an extra WOW factor,) tortilla chips, pita chips, baguette, crostini, pickles… the world is your oyster.

Ingredients

8oz. cream cheese, softened at room temp
1/3 cup buffalo sauce (plus more for topping)
1/3 cup blue cheese
1 1/4cup shredded cheddar cheese
1/2cup finely chopped celery
1/3cup finely chopped scallions
1 1/2cup shredded chicken see notes on how to make

Directions

Preheat the oven to 400 degrees F.

In a large bowl, mix together all of the ingredients until fully combined and there are no cream cheese clumps.

Pour the mixture into an oven safe skillet or baking dish. Top with more shredded cheddar cheese to taste and a drizzle of buffalo sauce. Bake for 10-15 minutes and then broil on high until the cheese is golden brown. Top with more scallions and enjoy!

Notes

For the shredded chicken, I just got those super cheap frozen chicken tenders from the grocery store and boiled them in salted water until fully cooked. You can boil a chicken breast, or 3-4 chicken tenders until the internal temperature is 165 degrees. Remove it from the heat and then shred with 2 forks or with your hands (if its cool enough!)
