Broccoli Crust Pizza
Move over cauliflower, there is a new crust in town! We just experimented with a broccoli crust for the base of our prosciutto mozzarella pizza and safe to say it was a home run.
Serves: 1 personal pizza
Ingredients:
Crust

2 cups lightly steamed broccoli florets

2 eggs

1/4 cup shredded mozzarella

1 tsp oregano
-
1 tsp garlic powder
-
1 tsp ground basil
-
Salt & pepper to taste
Toppings

1/2 cup tomato basil sauce from a jar

1/4 cup shredded mozzarella

8 broccoli florets
-
4 slices of prosciutto
Method:

In a food processor ground up your broccoli. Remove from the food processor and drain any liquids with a cheesecloth or paper towels.

In a bowl combine the broccoli with your eggs, shredded mozzarella, oregano, garlic powder, ground basil, salt and pepper. Mix all the ingredients together.

Place on a greased pan and with your hands spread out the mixture into a circular pizza crust.

Bake at 415 degrees for 20 minutes, or until the edges are golden and crispy and the center is firm.

Top with tomato and basil sauce, shredded mozzarella, broccoli florets and prosciutto.

Put back in the oven for another 5-7 minutes or until the cheese is fully melted.
