Mango Veggie Summer Rolls with a Peanut Lime Sauce

I always used to think summer rolls were such a gourmet, hard-to-make healthy dish that I should only order at restaurants. How wrong I was! These are super easy and great to make the night before work.

Serves: 8

Ingredients: 

Summer Rolls

  • 8 store bought rice paper wraps

  • 1 cup thinly sliced carrots

  • 1 cup thinly sliced mango

  • 1 cup thinly sliced red bell pepper

  • 1 cup thinly sliced zucchini

  • 1 avocado, sliced

  • ¼ cup cilantro leaves

  • 2 tablespoons sesame seeds

Peanut Lime Sauce

  • ¼ cup peanut butter

  • 1 teaspoon toasted sesame oil

  • 2 tablespoons rice vinegar

  • 1 lime, juiced

  • 1 ½ tablespoon peanut oil

Method:

1. Soak rice paper wraps in hot water to soften.

2. Wrap veggies, mango and avocado tightly in the rice paper wraps.

3. Mix the peanut lime sauce ingredients in a bowl until creamy.

4. Dunk wraps into the sauce.
