Peanut Lime Sauce
This sauce was inspired by one of my favorite healthy spots in NYC: Souen. Their sauces are magic. They literally just serve you vegetables and turn them into magic with these sauces, so that’s why I decided I needed to make my own instead of spending copious amounts of money on produce + sauce. I like this one because it has zest, sweetness and nuttiness, and it’s great for making vegetables not only edible, but enjoyable.
Ingredients:

¼ cup peanut butter

1 teaspoon toasted sesame oil

2 tablespoons rice vinegar

1 lime, juiced

1 ½ tablespoon peanut oil
Method:

Literally just mix everything in a bowl slowly until the peanut butter texture softens and you have one consistent, silky sauce.
Put on anything and everything.
