Sweet Potato Black Bean Quesadilla with Goat Cheese and Lime Crema

INGREDIENTS:
QUESADILLA:

2/3 cup mashed sweet potato

1/2 cup black beans

1/4 cup red onion, diced

2 whole wheat flour tortillas

2 tablespoons of goat cheese, separated

1 tablespoon sour cream

1/2 teaspoon salt

1/2 teaspoon pepper

Oil, for pan
-
Cilantro (optional)
LIME CREMA:
-
1/4 cup sour cream
-
1 tablespoon fresh lime juice
-
1/2 tablespoon lime zest
-
1/2 teaspoon salt
-
1/2 teaspoon pepper
INSTRUCTIONS:
1. Combine mashed sweet potato, sour cream, 1 tablespoon of goat cheese, salt, and pepper.
2. Place the sweet potato mixture on one tortilla, leaving about a half-inch around the outside empty.
3. Top with black beans, goat cheese and red onion, then place the second tortilla on top and press.
4. In a lightly oiled pan, cook the quesadilla on medium-high heat for 2 minutes then flip. Cook for another 2 minutes or until golden brown.
5. While the quesadilla cooks, combine all ingredients for the lime crema sauce in a small bowl.
6. Cut the quesadilla into quarters and serve with the crema.
