Peppermint Hot Cocoa Balls (No-Bake)

Christmas is just around the corner which means not only is holiday season in full swing, but so is bulking season. These hot cocoa Ballsy Bites go perfectly with a warm fire, soft jammies and a movie on the couch. Oh, did I mention they are extremely easy to make?! Yea, we’re talking no-bake.

To make these as foolproof as possible, I first took marshmallow spread (commonly known in our hearts as Fluff) and mixed it with crushed peppermint pieces. Then, I froze these dollops as the filling. In the meantime, I mixed sugar cookie powder mix and hot cocoa mix with all of the ingredients on the cookie dough package, except for eggs of course. Wrap the marshmallow balls with the dough and… tadaaaa! Top with mini marshmallows and more crushed peppermint for that artsy edge that will impress all your friends!

Ingredients

  • 1 bag/box sugar cookie powder mix
  • 1 cup marshmallow spread
  • 1/2 cup hot cocoa powder (that comes with mini marshmallows) you can add more for desired chocolatey-ness
  • Mini marshmallows from hot cocoa mix
  • 1/2 cup crushed peppermints or candy canes

Instructions

  • Mix the marshmallow spread with the crushed peppermints. With a 1/2 teaspoon scooper, scoop the mixture onto a lined baking sheet in a row. Put the baking sheet into the freezer
  • Make the sugar cookie mix as directed on the package, excluding the eggs. Add the hot cocoa mix to the eggless sugar cookie dough. To add more moisture, add a little extra butter or oil depending on what the mixture calls for. (Add one teaspoon at a time and mix until desired consistency is reached.)
  • Lay two inches of the dough mixture flat on your hand and wrap it around the a piece of the frozen fluff. Form a ball in your hand and enclose the marshmallow spread completely. Place onto the baking sheet. Repeat until all the dough is gone.
  • Top with mini marshmallow and crushed peppermint. Chill in the fridge or freezer and enjoy! Store in the freezer or fridge.
